Ginulay na Mais na May Baboy at Malunggay (Corn Soup with Pork and Moringa Leaves)



One of the easiest and tastiest soup that my husband and I love is Ginulay na Mais (Corn Soup). It is best to pair with fried or grilled dishes or just with plain white steamed rice. 

My brother and sister-in-law invited us for a lunch last weekend. I requested my brother to grill pork for us. Yes, I am spoiled :) And he requested atsara in return. Well, I did prepare atsara to bribe him for the grilled pork but I also prepared Ginulay na Mais sauteed with pork and garnished with malunggay, which I think is perfect for grilled pork. Aside from it is easy to prepare of course, I knew that my husband would love it also.

I remember how my mom or grandmother usually prepares their corn for ginulay. It is finely grated which makes the soup very thick. I like it but I also like to have something that I can chew. That is why I mixed whole corn kernel and grated corn in this recipe. I love it when they put squash leaves and flowers (dahon at bulaklak ng kalabasa) but unfortunately, we don't have it here in UAE so I used malunggay which works great also :)

If you prefer not to add pork or meat, it is definitely fine. It will still be delicious with plain vegies :)


Ingredients:
  • 1 can Whole Corn Kernel
  • 3 Pieces fresh corn - grated
  • 1/2 kg pork - cut into small slices
  • Moringa Leaves
  • 5 Tablespoon Fish sauce
  • salt
  • pepper
  • 3 cups of water + 1/4 cup
  • 1 medium sized onion - chopped
  • 1 tablespoon garlic - minced
  • Oil


Procedure:
  1. Season pork with salt and pepper and put in a casserole with 1/4 cup of water. Let it boil.
  2. Once the water is almost dry, add about 4 tablespoon of oil and fry it until golden brown.
  3. Add onion and garlic to saute.
  4. Add fish sauce  and pepper.
  5. Put in the whole corn kernel and the grated corn.
  6. Pour in the water.
  7. Let it simmer for about 3 minutes.
  8. You may adjust the seasoning depending to your taste.
  9. Once boiling, add the moringa leaves and remove the casserole from heat.
  10. Serve and enjoy!
