Ginataang Bilo-bilo

Glutinous Rice Dumplings in Coconut Milk (Ginataang Bilo-bilo) is usually served as a afternoon snack or as a dessert. Ginataang Bilo-bilo is best eaten freshly cooked.
This Filipino sweet snack consist of coconut milk, glutinous rice dumplings, sweet potatoes (kamote), purple yam (ube), bananas (saging na saba), jackfruit (langka) and sago (tapioca pearls). 
The word “Ginataang” in tagalog means cooked in coconut milk.  Bilo-bilo” describes the round shapes of the glutinous rice dumplings. These two plus other ingredients would make our delectable snack recipe.



Ingredients:
  • 1 cup jack fruit, cut into strips
  • 3 pcs. ripe Saba Bananas, peeled and cut into cubes
  • 2 pcs. Sweet potato, cut into cubes
  • 1 cup glutinous rice flour
  • 1 cup sugar
  • 2 cans coconut milk
  • ½ cup water
  • 1 ½ cup sugar
  • 2 cups pearl tapioca

Procedure:
  1. Blend flour and water blend them into dough. Shape into balls measuring ¼ inch in diameter. Set aside.
  2. In a large pot, bring coconut milk, sugar,  sweet potato, jack fruit and tapioca to a boil. When tapioca turns transparent in color, add the rice balls and saba banana.
  3. Boil for 10 more minutes ‘til the rice balls are soft and firm.
