This recipe is one of the very first posts I've wrote here in my blog. Aside from the fact that it is very easy to cook, authentic Filipino dish and healthy (well not considering the oil =D), it is also very good as snack or main course served with rice.
What I personally don't like about this is that it takes so much time in chopping all the ingredients. Yeah, I'm lazy.... he he he.... Any how here's my new version of Pinoy Okoy =D

Ingredients:
- 1 cup Bean Sprout (toge)
- 1 cup Sweet Potato - Julienned
- 2 cups Squash - Julienned (Kalabasa)
- 1/2 Kg Shrimp
- 3 Tablespoon Onion - Minced
- 2 Tablespoon Garlic - Minced
- Salt & Pepper
- oil
To make batter:
- 2 Eggs
- 1/2 cup cornstarch
- 1/2 cup water
Procedure:
- Make batter by mixing eggs, cornstarch and water. Set aside.
- Mix all together the vegetables, onion, garlic and seasonings.
- Pour in the batter and mix.
- Once everything is properly blended, heat pan with oil.
- Put about 2 tablespoon of the mixture on a hot pan and top with shrimp. Fry for 2-3 minutes each side or until golden brown.
- Best serve with chili-vinegar dipping.
- Serve and enjoy!
