Chocolate Crinkles




Chocolate crinkles are indeed heaven’s delight for everyone especially to those who loves chocolate. Well, who doesn't? I don’t know why I just tried to do this tempting treat recently but my first time won’t definitely be the last. Few ingredients and very easy to bake, everyone can do these. It is perfect for a holiday treat or even on a daily bite of happiness.







Ingredients:

1 1/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup soft unsalted butter
1 cup light brown sugar
2 large eggs
1/4 cup confectioners’ sugar

Procedure:

  1. Heat oven to 350° F / 180° F..
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. With an electric mixer, beat the butter and brown sugar on medium-high speed until light and fluffy, 2 to 3 minutes.
  4. Beat in the eggs.
  5. Reduce speed to low and gradually add the flour mixture.
  6. Form dough into small balls, about a tablespoon.
  7. Roll the balls in the confectioners’ sugar and place on parchment-lined baking sheets, spacing them 2 inches apart.
  8. Bake for 12 minutes-14 minutes or until the cookies are firm and the tops crack.
  9. Cool slightly on the baking sheet.

Rocky Road Coffee Cake

Sinful yet heavenly
This is the simplest way I could describe our dessert today. This easy cake is not an oven baked but a refrigerated one. Well, you will have your delectable cake ready in less than an hour. To cut-off the intro let us start this luscious triple treat.

Ingredients:
  • 500 grams (20 sachets) Graham Crackers (chocolate/honey flavoured)
  • 2 Eggs
  • 1 tablespoon Sugar
  • 1 can Condensed milk
  • 1 cup Nestle Full Cream
  • 3 Tablespoon Butter
  • 2 sachets 3-in-1 (instant) coffee
  • 2 cups small (or cut in to small pieces) Marshmallows
  • 1/2 cup chocolate chips
  • 1 cup Mixed fruits
  • 1 cup Sliced Almonds (you can alternate it with peanuts or cashew)

Procedure:
  1. Put 1/2 can of condensed milk and 1 cup cream in the graham crackers to easily crush it. Set aside.
  2. In a low heat melt the butter in a pan. Once melted add in the beaten eggs, sugar and coffee. Continue stirring with hand beater or fork to avoid getting burnt and for the eggs not to cluster. Do this for 7 minutes or until the mixture slightly thickens.
  3. Pour in the coffee mixture to the crushed graham crackers.
  4. Add in the marshmallows, 1/2 cup sliced almond, 1/2 cup mixed fruits and the remaining condensed milk.
  5. Continue mixing ‘til well blended. If the mixture become too dry and difficult to mix, add small amount of water or skim milk (optional). The mixture should not be too wet to achieve nice texture.
  6. Pour the mixture in a container and flatten it. Sprinkle the remaining almond, mixed fruits and chocolate chips on top. Refrigerate for at least 30 minutes (For best result refrigerate it overnight).
